Pacific Northwest Dining

Inlet Table

Inlet Table is Qalane Grand Resort's flagship dining room - a venue where the sourcing rigour of Pacific Northwest cooking meets a room designed to make every dinner feel like an occasion. It serves travellers who believe that the best meal of a Vancouver trip should happen inside their hotel, not require a taxi across town. Chef Mara Lund's rotating seasonal menu treats the 100-mile sourcing radius not as a marketing constraint but as a creative framework that consistently produces something genuinely new.

Seasonal Tasting Progression

The seven-course menu changes with each BC growing season, incorporating ingredients sourced directly from Pemberton Valley farms, the Fraser River delta, and Haida Gwaii fishing co-operatives.

Harbour-Facing Room Design

Warm hemlock panelling and angled window bays frame unobstructed views of Burrard Inlet, so the landscape becomes as much a part of the meal as what arrives at the table.

Chef's Counter Experience

A six-seat counter directly at the pass gives guests a full view of the kitchen in action - bookable separately and designed for those who want the meal to also be a conversation.

Private Dining Room

A glass-walled private room seating up to twelve is available for business dinners, celebrations, and group tastings, with a dedicated server and custom menu consultation.

Counter 49 Late Service

For guests who need something substantial after a long evening, Counter 49 operates until 2 a.m. with a shorter menu of the same kitchen's quality - no reservation required.

Chef's Table Collaboration

Quarterly, Chef Lund invites a guest chef from another Pacific Rim city for a joint tasting menu - past collaborators have arrived from Tokyo, Sydney, and Portland.
